澤蟹, Sawa-gani, means "Marsh Crab", or more precisely it is the Japanese Freshwater Crab. Kani, crab, becomes gani because of the rendaku. 澤 = Marsh, is the Kyūjitai, or old character form of this word. 沢, as seen elsewhere, is the Shinjitai, new character or simplified form of the kanji, that was specifically introduced in 1946.
